Natural color annatto can be used in meat conservation process.

The scientists from Iran declared that using of nitrites, salts or esters of nitrous acid, which may be dangerous for human health, - will soon be the bygone. Their researches have shown that the natural plant color annatto can be effectively used instead of nitrites.

Nitrites are usually applied by the food technologists during meat products conservation, for color and flavor stability of the ready meat products and in other processes.

The recent researches of nitrites are quite discrepant: on the one hand, the scientists doubt about safety of nitrites, but on the other hand the recent researches showed that the nitrites may be even useful for the human health. Namely, Sweden scientists have found that the nitrites can diminish the risk of ulcer appearance.

Anyway the majority of meat products enterprisers being in the situation of very diverse scientific information try to substitute nitrites by the alternative preservatives.
